This popular southern dish holds a special place in America's hearts nationwide. Most commonly served as a breakfast item, you can find this hearty meal served in almost every home-style diner/restaurant, even outside of the southern areas of the US!
We are talking about the American version of biscuits, small baked goods with a soft, crumbly interior, similar to a European scone. Known as a comfort food, this dish is made up of soft, flaky biscuits, covered in either a sawmill, or meat based white gravy. It is simple but delicious and highly effective in filling stomachs and warming hearts.
Sawmill gravy is made with cornmeal, bacon drippings, milk and seasonings. Meat based gravy's are made using drippings from pork sausage, white flour, milk and often bits of sausage, bacon, beef or other meat. While both gravy's are relatively similar in taste profile, they each have their own specific consistencies. Pair with a hearty side of breakfast potatoes, or fresh fruit and an egg and you are starting your day the right way!
